Vegdodo
Vegdodo is a flavorful Nigerian dish combining spicy Vchunks and caramelized plantains. This vegan delight is quick to prepare, offering a perfect blend of textures and tastes, garnished with fresh spring onions for a finishing touch.

Ingredients

2Plantains peeled and cut into cubes

300 gVchunks boiled and cut into bite-sized

3-4Cloves and Garlic minced

1 tbspGinger minced

2-3 tbspsOlive oil

2 tbspsTomato paste

1 tbspThyme

1 tbspPaprika

1 tbspCurry powder

1 pieceRed bell pepper chopped

1 pieceGreen bell pepper chopped

1 pieceOnion chopped

Salt adjust to taste

Instructions

Preheat your oven to 350°F (180°C).

Wash and peel the plantains then cut them into cubes.

Mix the olive oil, Vchunks, plantains and salt in a bowl.

Preheat your oven or air fryer to 350°F (180°C) and cook the plantain and Vchunks untill golden brown.

Heat the vegetable oil in a large pan over medium heat.

Add the chopped onions and sauté until they become translucent.

Add the minced garlic and ginger, and sauté for another minute until fragrant.

Stir in the tomato paste and cook for a few minutes until it darkens in color and the oil starts to separate.

Add the Vchunks and stir well to coat them with the tomato mixture.

Season with thyme, paprika, curry powder, salt, and pepper. Stir to combine.

Add the chopped red and green bell peppers and cook for a few more minutes until they soften.

Fold in the cubed plantains gently and cook until slightly caramelized.

Taste and adjust the seasoning as needed.

Garnish with fresh Spring Onion or parsley.
