Akara

Ingredients

  • 2 cups
    Black-eyed peas soaked and washed
  • 1 piece
    Onion small
  • 1-2
    Scotch bonnet peppers finely chopped, adjust to taste
  • Salt to taste
  • Vegetable oil

Instructions

  1. Rinse and soak black-eyed peas to soften it for 20minutes.

  2. Place the black-eyed peas in a blender or food processor, and blend. Add water if needed until you get a smooth paste.

  3. Transfer the paste to a mixing bowl and add the chopped onions, scotch bonnet peppers, and salt. Mix well to combine.

  4. Heat enough vegetable oil for deep frying over medium-high heat in a deep frying pan.

  5. Take spoonfuls of the akara mixture and carefully drop them into the hot oil. You can use an ice cream scoop or your hands.

  6. Fry the akara until golden brown and cooked through, turning them occasionally to ensure even frying.

Notes
