BEANS POTTAGE

Ingredients

    Brown or black-eyed beans
  • 1
    Onion chopped
  • 2-3 cloves
    Garlic minced
  • 2-3
    Tomatoes chopped
  • 1 tsp
    Ground cayenne pepper adjust to taste
  • 1 tsp
    Paprika
  • 2 tbsps
    Palm oil
  • Salt adjust to taste
  • Pepper adjust to taste
  • Chopped vegetables (carrots, spinach, sweet corn etc.) Optional

Instructions

  1. Rinse the beans thoroughly and soak them overnight in water

  2. Drain the water the next day

  3. Add the soaked beans with enough water to cover them in a large pot.

  4. Boil the beans until they are soft and easily mashed.

  5. Drain the water the next day.

  8. Heat the palm oil in a separate pan while the beans are boiling.

  9.  Add the chopped onions, garlic, and bell pepper.

  10. Sauté until they are soft and fragrant.

  11.  Add the chopped tomatoes to the pan and simmer until they turn tender and release their juices.

  12. Season the sautéed vegetables with cayenne pepper and paprika.

  13. Stir well to combine the flavors.

  14. Drain any excess water once the beans are well-cooked.

  15. Add the sautéed vegetable mixture to the pot of beans.

  16. Let it simmer on low heat for about 5 minutes.

  17. Taste and adjust the seasoning with salt and pepper as needed.

  18.  Serve the beans pottage hot, either on its own or with a side such as rice, plantains, garri or bread.
