Chia chocolate pudding with strawberry ragout

A dessert recipe that is simple to prepare, yet impressive and delicious. This beautiful chia pudding is creamy and thick, it tastes amazing and is rich in fibre, protein and omega-3 fatty acids.

For the chia chocolate pudding

  • 400 ml
    almond milk
  • 80 g
    chia seeds
  • 40 g
    cocoa powder
  • 3 tbsp
    agave or maple syrup
  • 1 pinch
  • 1 shot
  • 1 pinch

For the strawberry ragout

  • 250 g
  • 1 tbsp
    agave syrup
  • 1 splash
    balsamic vinegar
  • few dashes
    fresh ground colourful pepper

To serve

  • 1 tbsp
    almond slivers
  • mint leaves


For the chia chocolate pudding

  1. Mix all ingredients in a bowl and season to taste. Pour into glasses and chill, preferably overnight.

For the strawberry ragout

  1. Clean the strawberries and cut them into small slices or cubes. Mix with the rest of the ingredients and season to taste.

To serve

  1. Pour the strawberry ragout over the chia chocolate pudding, decorate with mint and almonds and serve.


You can add a shot of brandy or amaretto to the chia pudding mixture for an extra kick.
