Ingredients

2 cupsBrown rice (Ofada)

1 can (400ml)Coconut milk

1 cupWater

1 mediumOnion chopped

2 clovesGarlic minced

1Red bell pepper diced

1Green bell pepper diced

1 cupGreen peas

10 gFresh Oyster mushroom diced

1 tbspsCoconut oil

1 tspCurry powder

1 tspThyme

Salt adjust to taste

Instructions

Rinse the rice in cold water until the water runs clear. Drain and set aside.

Heat the coconut oil over medium heat in a large pot. Add the chopped onion, diced mushroom and minced garlic.

Sauté for two minutes.

Stir in the curry powder, thyme, and chilli pepper.

Pour the coconut milk and water, then add the rinsed rice. Stir everything together.

Bring the mixture to a boil and reduce to a low heat, cover the pot and let it simmer for about 20-25 minutes. Stir occasionally to prevent sticking.

Add the green peas when the rice is almost cooked and most of the liquid has been absorbed. Simmer for another 5-7 minutes or until the rice is tender and the peas are cooked.

Add the diced red and green bell peppers to the pot.

Taste and adjust the seasoning if necessary. You can add more salt, pepper, or spices to suit your preference.

Once the rice is fully cooked, remove it from the heat and let it rest for a few minutes before serving.
