Ingredients

2 cupsBrown rice (Abakaliki rice)

4 cupsWater

2 tbspsOlive oil

1Onion finely chopped

3 clovesGarlic minced

1/2 tspTurmeric paste

1Green chilli pepper diced

1 cupMixed vegetables (carrots, sweet corn, and green beans)

1/4 cupCooked and diced plant-based meat (optional)

1 tspCurry powder

1/2 tspThyme

Instructions

Rinse the rice thoroughly in cold water until the water runs clear. Drain and set aside

Heat the olive oil in a large skillet over medium heat. Add the chopped onions, turmeric paste and minced garlic. Sauté the mixture until it is translucent.

Add the green chilli peppers, mixed vegetables, and diced plant-based meat (optional).

Add the partially cooked rice to the skillet and stir well to combine with the vegetables and Vchunks.

Continue to stir-fry for about 5-7 minutes, ensuring the rice is well coated with the seasonings.

Taste and adjust the seasonings if needed. You can add more spices according to your preference.

Remove it from the heat once the Fried Rice is fully cooked, tender and well-seasoned.

Serve hot as a side dish with your favourite plant-based protein.
Notes
Exercise caution when cooking the Abakaliki rice to ensure it’s not overcooked during the initial parboiling, as achieving a slightly undercooked state is crucial for the final texture.
