Fruit salad with soya yoghurt

Start the day with the tastiest fruit and a topping of soy yoghurt. Perfect for a summer’s day, but also to boost your mood on a drizzly day! Delicious as a breakfast or as a healthy snack; full of vitamins, filling because of the soya yoghurt, with a freshness from the mint leaves and the lime juice.

Ingredients

  • 500 g
    soya yoghurt
  • 5 tbsp
    agave syrup optional
  • 200 g
    pineapple
  • 250 g
    strawberries
  • 250 g
    blueberries
  • 1
    banana
  • 1
    lime
  • 1 handful
    mint leaves

Instructions

  1. Peel the pineapple and cut it into cubes. Halve the strawberries and cut the banana into thin slices.
  2. Mix the pineapple, strawberries, banana and blueberries in a large bowl. Squeeze the juice from the lime and mix it into the fruit. Finely chop the mint leaves and add to the fruit mix.
  3. If desired, mix the agave syrup into the soya yoghurt (or leave unsweetened), and serve the fruit salad with the yoghurt.

Notes

Variation tip: Finely chop 100 grams of almonds with a large knife or in a food processor. Then mix the almonds with 200 grams of soy yoghurt, two tablespoons of agave syrup (or maple syrup) and one teaspoon of cinnamon. In the fruit salad, omit the mint and replace the pineapple with two oranges, and the blueberries with one apple. Enjoy!
