Kunnu aya
Kunnu Aya is a refreshing Nigerian drink made from Tigernuts and coconut. Strain the mixture to get a creamy liquid after soaking and blending the tigernuts and coconut with dates for natural sweetness. Chill and serve this delightful beverage cold for a satisfying and nutritious treat.

Ingredients

2 cupsTigernuts

1 bigCoconut flesh diced

Instructions

Rinse the tigeruts thoroughly under cold water to remove dirt or impurities.

Soak the tigernuts in water for at least 12 hours or overnight. This will soften them and make them easier to blend.

Drain the tigernuts and rinse them again after soaking,

Break the coconut, remove the flesh and cut into smaller pieces

Place the soaked tigernut, coconut and date in a blender with 4 cups of fresh water.

Blend on high speed for a few minutes until you have a smooth, creamy mixture.

Strain the tigernut mixture through a nut milk bag, fine mesh strainer, or cheesecloth into a bowl or pitcher. This will separate the tigernut milk from any remaining solids.

Squeeze the bag or press the solids to extract as much liquid as possible.

Discard the solids or save them for other recipes (they can be used as a base for tigernut flour or smoothie ingredient).

Chill the Kunnu Aya in the refrigerator for a few hours before serving. Serve it cold and enjoy your homemade tigernut juice!
Notes
You can experiment with the Kunnu sweetness and flavourings to suit your taste. Tigernut and coconut are naturally sweet, so you can adjust the date to your preference.
