250 gTofu bite-sized

2 cupsGroundnut (peanut) paste or butter

5 mediumCarrot sliced

2-3scotch bonnet peppers or habanero peppers finely chopped

1 tbspPalm oil optional

2-3 cupsWater or vegetable stock

Instructions

Heat a large pot or saucepan and add the palm oil (if using). Allow it to heat up, but don't let it smoke.

Add the chopped onions, garlic, and scotch bonnet peppers. Sauté until they become fragrant and the onions turn translucent.

Add the tofu pieces and brown them on all sides.

Stir in the groundnut paste or peanut butter. Allow it to cook for a few minutes while stirring constantly. Be careful not to let it burn.

Add the water or stock gradually while stirring to create a smooth, thick soup. Adjust the liquid quantity to your desired consistency.

Season the soup with locust bean powder and salt. Taste and adjust the seasoning as needed.

Simmer the soup over low to medium heat, stirring occasionally, for about 30-40 minutes or until the tofu is tender and the soup thickens.

Add the sliced carrot and green bell pepper to the soup during the last 2 minutes of cooking.
