Miyan Taushe

Ingredients

  • 2 cups
    Pumpkin or squash peeled and diced
  • 2 cups
    Peanut butter
  • 1 small
    Onion chopped
  • 1-2 tsps
    Paprika
  • 1-2
    Scotch bonnet peppers chopped (adjust to your preference)
  • 1 tbsp
    Palm oil optional
  • 1 tsp
    Locust beans (Dawadawa)
  • Salt  adjust to taste
  • Water adjust to taste
  • Spinach or other leafy greens optional

Instructions

  1. Heat the palm oil in a pot over medium heat. (optional)

  2. Add chopped onions and sauté until the palm oil become translucent.

  3. Add the diced pumpkin or squash to the pot and stir to combine with the onions and garlic.

  4. Add the peanut butter and enough water to cover the pumpkin.

  5. Bring the mixture to a simmer and cook until the pumpkin is soft and easily mashed with a fork, typically 15-20 minutes.

  6. Use a potato masher or immersion blender to mash the pumpkin until the soup is smooth and creamy. Add more water if it's too thick.

  7. Stir in the paprika and chopped scotch bonnet peppers. Adjust the spice level to your taste.

  8. Season the soup with salt and dawadawa let it simmer for another 5-10 minutes to let the flavors meld together.

  9.  Add chopped spinach or other leafy greens to the soup and cook until wilted.

  10. Taste the soup and adjust the seasoning if needed. Serve hot and enjoy your Miyan Taushe!
