Instructions

Heat the palm oil in a pot over medium heat. (optional)

Add chopped onions and sauté until the palm oil become translucent.

Add the diced pumpkin or squash to the pot and stir to combine with the onions and garlic.

Add the peanut butter and enough water to cover the pumpkin.

Bring the mixture to a simmer and cook until the pumpkin is soft and easily mashed with a fork, typically 15-20 minutes.

Use a potato masher or immersion blender to mash the pumpkin until the soup is smooth and creamy. Add more water if it's too thick.
