Moinmoin 

Enjoy a taste of Nigeria with this delightful Moin Moin recipe. Made from blended black-eyed peas, red and Scotch bonnet peppers, and flavored with palm oil and mushroom powder, this dish is wrapped in banana leaves or foil and steamed to perfection. Serve this traditional Nigerian dish as a side or main meal for a flavorful experience.

Ingredients

  • 2-3 cups
    black-eyed peas
  • 1 medium
    onion chopped
  • 2-3
    red bell peppers chopped
  • 2-3
    Scotch bonnet peppers (adjust to your spice preference)
  • 1/4 cup
    palm oil or vegetable oil
  • 1 tsp
    mushroom powder
  • seasoning of choice (Bouillon cubes, salt to taste)
  • banana leaves or foil for wrapping (if available)
  • water

Instructions

  1. Soak the black-eyed peas in water for a few hours or overnight to soften them.

  2. Drain and rinse the soaked peas thoroughly.

  3. Combine the black-eyed peas, chopped onions, red bell peppers, Scotch bonnet peppers, and a little water in a blender. Blend until you have a smooth paste. Add more water if needed.

  4. Pour the blended mixture into a large mixing bowl. Add palm oil, mushroom powder and salt. Mix everything until well combined.

  5. Pass the banana leaves quickly over an open flame to make them pliable. If using foil, no preparation is needed.

  6. Place a portion of the mixture onto a banana leaf or foil, then fold it into a rectangular or cylindrical shape, securing the ends by folding.

  7. Repeat this process until all the mixture is used up.

  8. Place the wrapped Moin Moin in a steamer or a large pot with a steaming rack. Add enough water to the pot without touching the Moin Moin.

  9. Cover the pot and steam for about 45 minutes to 1 hour, or until the Moinmoin is firm and cooked.

  10.  Allow it to cool a bit before unwrapping and slicing.

Notes
