Oha Soup

Ingredients

Servings: 1
  • 2 cups
    Oha leaves substitute with spinach if unavailable
  • 300 g
    Vchunks 
  • 5 small
    Cocoyam 
  •  1/4 cup
    Palm oil
  • 1
    Onion finely chopped
  • 2 tsps
    Ground mushroom 
  • 1 tsp
    Ground pepper Adjust to taste
  • 1/2 tsp
    Ogiri Igbo 
  •  Salt Adjust to taste
  • Water or stock

Instructions

  1. Wash and cut the Oha leaves. And set aside.

  2. Wash and boil the cocoyam till it becomes soft. Remove the peel and blend or pound to smooth paste.

  3. Cook the Vchunks with chopped onions and water until tender in a pot.

  4. Add palm oil to a separate pot and heat it until it becomes clear (not smoking).

  5. Add the ground mushroom and pepper to the palm oil and stir.

  6. Pour the cooked Vchunks and its stock into the pot with the palm oil mixture.

  7. Add the ogiri, stir well and let it simmer for 10-15 minutes, then add the cocoyam paste for thickness.

  8. Add the chopped Oha leaves (or spinach) and stir gently. Let the soup simmer for 5-7 minutes, or until the leaves are wilted and tender.

  9. Season with salt to taste and adjust the spiciness if needed.

  10. Serve your Oha soup hot with your choice of fufu or pounded yam.

Notes
