Tigernut turmeric juice

Ingredients

Servings: 1
  • 1 cup
    Tigernuts
  • 2 roots
    Turmeric washed
  • 4 cups
    Water 
  • 1/4 cup
    Dates
  • 1/2 tsp
    Vanilla extract optional

Instructions

  1. Rinse the tigernuts thoroughly under cold water to remove any dirt or impurities.

  2. Soak the tigernuts in water for at least 12 hours or overnight. This will soften them and make them easier to blend.

  3. Drain the tigernuts and rinse them again after soaking.

  4. Place the soaked tigernuts, date and turmeric in a blender with 2 cups of fresh water. You can add the date and vanilla extract at this stage if desired.

  5. Blend on high speed for a few minutes until you have a smooth, creamy mixture.

  6. Strain the tigernut mixture through a nut milk bag, fine mesh strainer, or cheesecloth into a bowl or pitcher. This will separate the tigernut milk from any remaining solids.

  7. Squeeze the bag or press the solids to extract as much liquid as possible.

  8. Discard the solids or save them for other recipes (they can be used as a base for tigernut flour or a smoothie ingredient).

  9. Add 2 cups of water to the tigernut milk and stir well.

  10. Taste the tigernut juice and adjust the sweetness or flavoring to your preference by adding more date or vanilla extract if needed.

  11. Chill the tigernut juice in the refrigerator for a few hours before serving. Serve it cold, and enjoy your homemade tigernut juice!

Notes

You can experiment with the sweetness and flavourings to suit your taste. Tigernut juice is naturally sweet, but you can adjust it to your liking.
