2-3 tbspsOlive oil

1Onion chopped

5 bigTomatoes blended

3 tbspsTomato paste homemade

3Red bell pepper blended

1Habanero pepper blended

2-3 clovesGarlic grated

1 tspGinger grated

1 tspCurry powder

1 tspPaprika optional, for color

1-2Bay leaves

5 stemsBasil leaves Optional

Instructions

Heat the olive oil over medium heat in a pot.

Add the chopped onions and sauté until they become translucent.

Add the grated garlic and ginger, and sauté for another minute until fragrant.

Add the Vchunks to the pot and brown them on all sides.

Stir in the tomato paste, blended tomatoes, basil and bell peppers. Cook for 10 minutes.

Add curry powder, paprika (if using) and bay leaves. Mix well.

Pour enough water to cover the Vchunks, and bring the stew to a simmer.

Reduce the heat to low, cover the pot, and let the stew simmer gently for about 20 to 30 minutes.

Add more water during cooking if needed.

As the stew cooks, check and adjust the seasoning with salt and pepper to taste.

Once the stew has thickened, remove the bay leaves.

Serve the Stew hot with rice, yam, plantains, or preferred side dishes.
