Vchunks pie

Ingredients

For the Dough

  • 400 g
    Roll oat flour
  • 100 g
    Cassava flour
  • 250 g
    Vegan butter
  • 1 tsp
    Baking powder
  • 1 pinch
    Salt
  • Cold Water

For the Filling:

  • 250 g
    Plant-based meats (Vchunks) minced
  • 1 medium
    Onion finely chopped
  • 2 medium
    Carrots diced
  • 2 medium
    2 medium potatoes diced
  • 2 tbsps
    Vegetable oil
  • 2 cloves
    Garlic minced (optional)
  • 1 tsp
    Curry powder
  • 1/2 tsp
    Thyme
  • Salt Adjust to taste
  • Pepper Adjust to taste

Instructions

Prepare the Dough:

  1. Combine the flour, baking powder, and a pinch of salt In a mixing bowl.

  2. Using your fingers add the margarine, rub it into the flour mixture until it resembles breadcrumbs.

  3. Add cold water gradually and knead until a smooth dough forms. Cover it with plastic wrap and let it rest while you prepare the filling.

Prepare the Filling:

  1. Heat the vegetable oil in a pan over medium heat.

  2. Add the chopped onions and garlic (if used) and sauté until translucent.

  3. Add the Plant-based meat (Vchunks) and cook until browned, breaking it up with a spoon.

  4. Add the diced carrots and potatoes and continue to cook for a few minutes until they start to soften.

  5. Season with curry powder, thyme, salt, and pepper. Stir well and cook until the vegetables are tender.

Assemble the  Vchunks Pies:

  1. Preheat your oven to 350°F (180°C).

  2. Roll out the dough on a floured surface to about 1/8-inch thickness.

  3. Use a round cutter or a glass to cut out circles from the dough.

  4. Place a spoonful of the Vchunks filling in the center of each dough circle.

  5. Fold the dough to form a half-moon shape and use a fork to seal the edges.

  6.  Place the assembled Vchunks pie on a baking sheet lined with parchment paper.

Bake

  1.  Brush the tops of the Vchunks pies with some plant milk for a golden finish (optional).

  2.  Bake in the oven for 25-30 minutes or until they are golden brown.

Serve

  1. Allow the Vchunks pies to cool slightly before serving. They can be enjoyed warm or at room temperature.
