Vchunks Suya
This suya is a plant-based meat alternative to Nigeria’s signature street food featuring spicy grilled skewers rolled in a flavorful groundnut, ginger, chilli spice mix. Adjust the spice level to your liking by adding more or less cayenne pepper. Enjoy this authentic Nigerian street food classic!

150 gVchunks boiled

1/2 cupGroundnut (peanut) powder

1 tbspCayenne pepper

1 tbspPaprika

1 tbspGarlic powder

1 tbspOnion powder

1/2 tbspGinger powder

1/4 tbspCameroon pepper (Uda, Eeru, Chumba)

1/4 cupVegetable oil
Instructions

Boil the Vchunks with water, onion and salt till it is very tender.

Reduce the stock and add some of the groundnut powder, paprika, garlic powder, onion powder, ginger. Cook until the water dry.

Soak the skewers in water for about 30 minutes to prevent them from burning on the grill.

Mix the groundnut powder, cayenne pepper, paprika, garlic powder, onion powder, ginger powder, and salt in a bowl to create the Suya spice rub.

Cut the Vchunks into strip and thread onto the skewers, leaving some space between each piece.

Brush the Vchunks with vegetable oil to help the spice rub adhere.

Coat the skewered Vchunks with the Suya spice rub generously on all sides.

Preheat your grill or barbecue to medium-high heat.

Grill the skewers for about 5-10minutes, turning occasionally, until the Vchunks cooked and has a nice char.

Serve the Suya hot, garnished with extra groundnut powder and sliced onions if desired.
