vEGGy Sauce (Tofu scramble)

This tofu vegetable sauce is a quick and tasty dish. Tofu is simmered in a flavorful blend of spices, tomatoes, and bell peppers, creating a delightful accompaniment for bread, yam, or plantain. Customize the spice level to suit your taste, and savour this healthy and satisfying veggie sauce.

Ingredients

  • 250 g
    Tofu
  • 2-3 tbsps
    Vegetable oil
  • 1
    Onion chopped
  • 2-3
    Tomatoes chopped
  • 1
    Bell pepper chopped
  • 2-3
    Cloves garlic minced
  • 1 tsp
    Ginger minced
  • 1 tsp
    Paprika or chili powder Adjust to taste
  • 1 tsp
    Curry powder
  • Salt and pepper Adjust to taste
  • Pepper Adjust to taste

    Spinach leaves

Instructions

  1. Mash the tofu with a potato masher

  2. Heat the vegetable oil over medium heat in a skillet or pan.

  3. Add the chopped onions and sauté until they become translucent.

  4. Add the minced garlic and ginger, and sauté for another minute until fragrant.

  5. Stir in the chopped tomatoes, spinach and bell pepper. Cook for a few minutes until the tomatoes soften and release their juices.

  6. Add paprika or chili powder,and curry powder. Mix well to combine the spices.

  7. Pour in a small amount of water to create a sauce base. Let the mixture simmer for a few minutes until the flavors meld, and the sauce thickens slightly.

  8. Gently add the mashed tofu, ensuring they are coated with the sauce.

  9. Cover the skillet or pan and let the tofu simmer in the sauce for an additional 5-7 minutes, allowing them to absorb the flavors.

  10. Season the sauce with salt and pepper to taste.

  11.  Garnish with chopped fresh parsley or cilantro if desired.

  12. Serve the veggy hot as a side dish with bread, yam, or plantain.
