1-Pan Brown Rice with Spinach and Mushrooms

This meal can be made in less than 15 minutes! Perfect for people on the go that still want to make tasty and filling meal and have a minimal amount of dishes to do later.

Ingredients

Servings: 2
  • 1
    onions quartered
  • 2 tbsp
    oil
  • 200 g
    mushrooms (seasonal mix) roughly chopped
  • 1/2 tbsp
    fresh thyme
  • 1 tbsp
    fresh oregano
  • 250 g
    pre-cooked brown rice bought or self-made
  • 125 g
    vegan cream cheese
  • 200 g
    spinach
  • 25 g
    almonds roughly chopped
  • salt and pepper to taste

Instructions

  1. Heat up some oil in a deep pan and brown the onions for about 2-3 minutes
  2. Add the mushrooms, thyme and half the oregano. Stir the mixture well and add salt and pepper to taste.
  3. Add the pre-cooked rice along with the vegan cream cheese and mix everything into a creamy looking rice. While mixing, add spinach periodically and let it shrink as your stir.
  4. Done! Serve the meal in wide bowls and garnish it with the rest of the oregano and almonds.

Notes

Tip: Instead of seasonal mix mushrooms you can also use 100g shiitake and 100g chestnut mushrooms. If you do so, just chop the mushrooms in half.
