Plant-based apple pie with walnuts and raisins
This is a completely vegan recipe which uses linseed soaked in water to replace eggs. Combining cinnamon, walnuts and raisins with sweet apples creates a fantastic flavour which is perfect on a cold autumn afternoon with a cup of tea.

|10 g||broken linseeds|
|100 ml||sunflower oil|
|50 g||cane sugar|
|1 tsp.||baking powder|
In a bowl, mix the linseed together with warm wate (2.5 tablespoons of hot water per tablespoon of linseed) and let the seeds soak for at least 10 minutes.
Grind the oatmeal with a blender or food processor into a fine flour. Add the baking powder, two-thirds of the sugar and a pinch of salt and stir everything well.
Blend the banana and sunflower oil until you have a smooth mixture.
Add the oil-banana mixture and the linseed egg to the dry ingredients (oatmeal) and knead everything with your hands until a dough has been formed. Wrap the dough in foil and put it in the fridge.
Preheat the oven to 180 degrees.
Soak the raisins in warm water for at least 5 minutes.
Peel the apples and cut them into cubes of approximately 1 cm. Mix the apple pieces well with the raisins, lemon juice, cinnamon, the chopped walnuts and the rest of the sugar.
Take the dough from the fridge and dust the counter with some flour. Roll the dough with a rolling pin (or tall glass) until it's flat and place it in a cake tin that has been greased with sunflower oil. Press it firmly into the tin and pour in the apple-raisin mixture.
Bake the pie for 60 minutes.
