Steak with mushrooms and vegetable chips

2 plant-based steaks e.g. Vivera Plant Steak
4 tbspoil
250 gmushrooms
1 garlic clove
350 gcarrots
150 gparsnips
1 tspthyme
  • Prep Time: 35 minutes

    Peel the carrots and parsnips, and cut into thin chips.

    Mix the vegetable chips with 2 tbsp oil, salt, pepper and thyme.

  3. 3

    Bake the vegetable chips on a baking tray for 25 minutes in a preheated oven (175 °C or 350 °F).

    Slice the mushrooms and crush the garlic.

  5. 5

    Heat 2 tbsp oil in a pan, and fry the steak on both sides for 9 minutes.

    Remove the steaks from the pan, and allow them to cool for 2 minutes.

  7. 7

    Meanwhile, fry the mushrooms and garlic until golden brown.

  8. 8

    Serve the steak with the mushrooms and the vegetable chips, seasoned with salt and pepper if necessary.
