Black Bean Noodle Bowl (ve)

Ingredients

Servings: 10 children
  • 450 g
    rice noodles dry weight
  • 2 tbsp
    cooking oil
  • 160 g
    red onion
  • 2 cloves
    garlic chopped
  • 16 g
    fresh ginger chopped
  • 200 g
    chestnut mushrooms sliced
  • 1 litre
    water
  • 2 tbsp
    dark soy sauce
  • 2 tsp
    rice vinegar
  • 1 tsp
    Chinese 5 spice
  • 50 g
    sunflower seeds
  • 300 g
    black beans tinned
  • 2 tsp
    agave syrup
  • 200 g
    frozen edamame beans
  • 300 g
    frozen mixed vegetables

Instructions

  1. Cook your noodles according to the packet instructions and then rinse with cold water and set to one side.

  2. Heat the oil in a saucepan over a medium heat. Once hot, add the red onion and cook for 5 minutes. Add the garlic, ginger and mushrooms. Cook for another 5 minutes until the mushrooms turn brown.

  3. Add the water, soy sauce, vinegar, Chinese 5 spice, sunflower seeds, black beans and agave syrup. Put the lid on and simmer for 10-15 minutes, until you have a rich broth that is a deep brown colour.

  4. Add your vegetables and frozen edamame beans and cook for another couple of minutes. 

  5. Place a portion of noodles into a bowl and ladle the vegetables, beans and broth over the top and serve.
