Indian sausage rolls

Ingredients

Servings: 10 children
  • 300 g
    potatoes boiled
  • 250 g
    silken tofu
  • 50 g
    frozen peas cooked
  • 1 tsp
    salt
  • 2 tsp
    garam masala
  • 2 tsp
    garlic powder
  • 1 tsp
    turmeric
  • 1 tbsp
    lemon juice
  • 1 sheet
    puff pastry dairy-free
  • 1 tsp
    plant-based milk (to seal the pastry)

Instructions

  1. Preheat the oven to 190°C.

  2. Mash the boiled potatoes whilst they are still warm with the silken tofu.

  3. Add in the cooked peas, lentils, salt, spices and lemon juice and mix well to make sure that everything is well combined and seasoned.

  4. Lay out the puff pastry sheet and slice it down the middle length ways so that you have two long strips. Lay half of the potato filling in a line down the middle of each strip of pastry. Use your hands to press the filling together so that the rolls are as packed full as possible. You want to make sure you use up all of the filling.

  5. Dab a little plant-based milk along the edge of the length of one side of the pastry sheet. Then, lift the pastry over the top of the filling and seal it together down the side. Use a fork to press down on the edge to make sure it is secure. Cut each long pastry roll into 5 portions. You will end up with 10 individual rolls in total.

  6. Lay the rolls on a lined baking tray, spacing them out evenly and then bake for 30 mins until golden and the pastry is crispy.
