Herby roasted mini potatoes

Another simple and delicious side dish perfect to accompany a festive meal with friends and family. These tasty potatoes are low in fat, sugar and salt, and are a healthy alternative to typical roast potatoes, which tend to be higher in saturated fat.

  • Cooking Time: 45 minutes
  • Total Time: 50 minutes

Ingredients

Servings: 10 children

For the potatoes

  • 1.5 kg
    Large white potatoes, skin on (Maris Piper or similar) Cut into 1-1.5cm cubes
  • 2 tbsp
    Oil
  • 2 tbsp
    Dried oregano

Instructions

  1. Cut the potatoes into 1-1.5cm cubes

  2. Combine the potatoes, herbs and oil in a bowl until evenly coated.

  3. Spread on parchment paper on a baking tray.

  4. Roast at 220°C for 45 minutes or until golden brown, turning/mixing halfway through cooking.
