Herby roasted mini potatoes (VE)
Another simple and delicious side dish perfect to accompany a festive meal with friends and family. These tasty potatoes are low in fat, sugar and salt, and are a healthy alternative to typical roast potatoes, which tend to be higher in saturated fat.

For the potatoes

1.5 kgLarge white potatoes, skin on (Maris Piper or similar) Cut into 1-1.5cm cubes

2 tbspOil

2 tbspDried oregano
Instructions

Cut the potatoes into 1-1.5cm cubes

Combine the potatoes, herbs and oil in a bowl until evenly coated.

Spread on parchment paper on a baking tray.

Roast at 220°C for 45 minutes or until golden brown, turning/mixing halfway through cooking.
