Ingredients
Tofu taco

350 gExtra firm taco

1 tspGround coriander

1 tspSmoked paprika

1 tspCumin powder

1 tbspTomato puree

1 tbspTomato ketchup

1 tbspAgave nectar
-
20 mlOil
-
2Onions sliced
-
2Red peppers sliced

10Taco shells
Refried beans
-
250 gPinto beans
-
5 mlOlive oil
-
2 tbspWater
-
1 tspCumin powder
-
1 tspOnion powder
-
1Lime juice only
-
1 handfulFresh coriander leaves to garnish
Instructions
For the tofu tacos

Drain the tofu and gently press with kitchen roll to remove any excess water

In a large bowl add the spices, 1 tbsp tomato puree, 1 tbsp tomato ketchup, 1 tbsp agave nectar and combine.

Grate the tofu and add to the mix then gently combine.

Heat the oil in a large pan and fry the onion and peppers for five minutes to soften.

Add in the tofu mix and fry for 10 minutes, until the mixture is sticky and hot.
For the refried beans

Add the ingredients to a bowl and crush with a stick blender or potato masher.
