Ingredients

Servings: 10 children

Tofu taco

  • 350 g
    Extra firm taco
  • 1 tsp
    Ground coriander
  • 1 tsp
    Smoked paprika
  • 1 tsp
    Cumin powder
  • 1 tbsp
    Tomato puree
  • 1 tbsp
    Tomato ketchup
  • 1 tbsp
    Agave nectar
  • 20 ml
    Oil
  • 2
    Onions sliced
  • 2
    Red peppers sliced
  • 10
    Taco shells

Refried beans

  • 250 g
    Pinto beans
  • 5 ml
    Olive oil
  • 2 tbsp
    Water
  • 1 tsp
    Cumin powder
  • 1 tsp
    Onion powder
  • 1
    Lime juice only
  • 1 handful
    Fresh coriander leaves to garnish

Instructions

For the tofu tacos

  1. Drain the tofu and gently press with kitchen roll to remove any excess water

  2. In a large bowl add the spices, 1 tbsp tomato puree, 1 tbsp tomato ketchup, 1 tbsp agave nectar and combine.

  3. Grate the tofu and add to the mix then gently combine.

  4. Heat the oil in a large pan and fry the onion and peppers for five minutes to soften.

  5. Add in the tofu mix and fry for 10 minutes, until the mixture is sticky and hot.

For the refried beans

  1. Add the ingredients to a bowl and crush with a stick blender or potato masher.
