Sweet Potato Cake (VE)

Servings: 10 children

For the cake

  • 115 g
    Sweet potato cooked and mashed
  • 60 g
    Cocoa powder
  • 360 ml
  • 1 tsp
    Apple cider vinegar
  • 80 ml
  • 50 g
    Beetroot cooked and grated
  • 120 g
  • 180 g
    Self-raising flour
  • 1 tsp
    Bicarbonate of soda
  • 1 tsp
    Baking powder

For the frosting

  • 120 g
    Sweet potato cooked and mashed
  • 70 g
    Cocoa powder
  • 2 tbsp
  • 2 tbsp
    Maple syrup or agave nectar


For the cake

  1. Add the ingredients into a bowl and combine to form a batter.

  2. Pour into a lined brownie tin and bake for 45 – 50 minutes on 180, in the centre of the oven.

For the frosting

  1. Add the ingredients into a food processor (or hand whisk) and mix to combine.

  2. Add the frosting to the cooled cake.
