Sausage and Red Pepper Pizza (ve)

Ingredients
Pizza dough

300 gstrong white bread flour plus a little extra for rolling out the dough

200 gwholewheat spelt flour

0.5 tspsalt

7 ginstant dried yeast
-
300 mlwarm water

1 tbspoil
Pizza sauce
-
1 tbspoil
-
1small onion diced
-
1small red bell pepper sliced
-
1 tbsptomato puree
-
1 tspsweet, smoked paprika
-
1 tspgarlic granules
-
200 gchopped tomatoes
-
50 mlwater
Pizza toppings
-
10plant-based sausages sliced into 1cm pieces
-
200 gsweetcorn drained and rinsed

100 gplant-based cheese grated
Instructions

Preheat the oven to 200°C.

Mix the flours, yeast and salt together in a large bowl. Pour in the water and oil and mix to make a smooth dough.

Put the dough back in the bowl and place a clean tea towel over the top. Leave to rest for 20 minutes.

In the meantime, make the sauce. Heat the oil in a pan and fry the onion and pepper until soft.

Add the tomato puree, sweet smoked paprika and garlic granules and fry for one minute. Pour in the chopped tomatoes and water and bring the sauce to the boil. Allow the sauce to simmer for 15 minutes.

Roll the dough out into a large rectangle on a floured surface and place on a lightly-oiled baking tin (37 x 27cm).

Top the pizza base with the sauce, sliced plant-based sausages and sweetcorn.

Sprinkle on the cheese.

Bake for 25 minutes or until the dough has risen and the cheese is melted.
