Plant-based apple pie with walnuts and raisins

This is a completely vegan recipe that uses flaxseed soaked in water to replace eggs. Combining cinnamon, walnuts, and raisins with sweet apples creates a fantastic flavor that is perfect on a cold autumn afternoon with a cup of tea.

Ingredients

Servings: 6 people
  • 1 tbsp
    crushed flaxseeds
  • 1 cup
    oatmeal
  • 1
    banana
  • 4 handfuls
    raisins
  • 8 cups
    apples
  • ½ cup
    sunflower oil
  • 1 ⅓ tbsp
    flour
  • ¼ cup
    cane sugar
  • 1 tsp
    baking powder
  • 2 tsp
    cinnamon
  • 1
    lemon
  • ½ cup
    walnuts

Instructions

  1. In a bowl, mix the linseed together with warm water (2.5 tablespoons of hot water per tablespoon of flaxseed) and let the seeds soak for at least 10 minutes.

  2. Grind the oatmeal into a fine flour with a blender or food processor. Add the baking powder, two-thirds of the sugar, a pinch of salt, and stir everything well.

  3. Blend the banana and sunflower oil until you have a smooth mixture.
  4. Add the oil-banana mixture and the linseed egg to the dry ingredients (oatmeal) and knead everything with your hands until a dough has been formed. Wrap the dough in foil and put it in the fridge.
  5. Preheat the oven to 350 degrees.

  6. Soak the raisins in warm water for at least five minutes.
  7. Peel the apples and cut them into cubes of approximately 1 cm. Mix the apple pieces well with the raisins, lemon juice, cinnamon, chopped walnuts, and the rest of the sugar.
  8. Take the dough from the fridge and dust the counter with some flour. Roll the dough with a rolling pin (or tall glass) until it’s flat and place it in a cake tin that has been greased with sunflower oil. Press it firmly into the tin and pour in the apple-raisin mixture.

  9. Bake the pie for 60 minutes.
