Baked Pumpkin Spice Donuts with Chocolate Cinnamon Icing

Whether it be for Halloween, Thanksgiving or just making donuts with a unique twist, this ridiculously tasty take on the traditional donut is sure to bring you to your knees!

Ingredients

Servings: 6 donuts

Dry Ingredients

  • 1 ¼ cups
    all-purpose flour
  • 2 tsp
    baking powder
  • 1 tsp
    ground cinnamon
  • ½ tsp
    ground nutmeg
  • ½ tsp
    finely ground sea salt
  • tsp
    ground ginger
  • tsp
    ground cloves

Wet Ingredients

  • ¼ cups
    applesauce
  • cups
    light brown sugar
  • 1 tbsp
    maple syrup
  • 1 tsp
    vanilla extract
  • ½ cups
    pumpkin puree
  • ¼ cups
    almond milk or preferred plant milk

Icing Ingredients

  • 1 cup(s)
    powdered sugar
  • 3 tbsp
    cocoa powder
  • 3 tbsp
    almond milk or preferred plant milk
  • 1 tsp
    cinnamon

Instructions

Prep

  1. Preheat the oven to 350°F.

  2. If your donut pan is not non-stick then use this time to grease it.

Donut Batter

  1. Take all the dry ingredients and mix them together in a mixing bowl.

  2. Pour the applesauce into a small bowl and add 1 tsp of the baking powder to it. Whisk this mixture until it bubbles and becomes frothy.
  3. Add the brown sugar and mix it well.
  4. Add the pumpkin puree, vanilla, milk, and the maple syrup and mix them well.
  5. Combine the dry and wet mixtures and stir until it's firm but not difficult to stir. Add more plant milk if the dough is too stiff.
  6. Pour the final mixture into a donut pan and let it bake for 20 to 25 minutes. Alternatively you can stick a toothpick in it and check if it's done when the toothpick comes out clean.Bake for approximately 20 to 25 minutes or until a toothpick comes out clean. Cool on a wire rack for 10 minutes and then remove from the pan and place on the rack until completely cool

  7. Let the donuts cool on a wire rack for about 10 minutes then remove the doughnuts from the pan and let those cool off completely on the wire rack.

Icing

  1. Pour the powdered sugar, cocoa powder, cinnamon powder and plant milk into a medium-sized bowl and stir them together until it is smooth and creamy. The texture should be somewhere between frosting and glaze. Add more milk if needed.

  2. Done! Add the icing once the doughnuts have completely cooled off and enjoy!
