British Carrot Cake


Dough ingredients

    carrots grated

    all-purpose flour
  • 2 tsp
    baking powder
  • cup
  • 1 tsp
    cinnamon ground
  • 1 tsp
    ginger ground
  • 1 tsp
  • 1 cup
    vegan butter
  • 1 cup
    orange juice
  • 1 tsp
    orange zest grated
  • ½ tsp
    vanilla extract
  • 1 pinch

Icing ingredients

  • ½ cup
    vegan butter
  • cups
    icing butter (buttercream)
  • ½ tsp
    vanilla extract
  • Cashew or sunflower seeds optional


  1. Preheat the oven to 340°F and line a baking tin.

  2. Mix the sugar and butter together in a mixing bowl until light and fluffy.
  3. Grate the carrots and add to the mix.
  4. Add the raisins, the orange juice and orange zest to the mix.
  5. Mix in the flour, salt, spices and vanilla and stir well.
  6. Pour the mixture into a greased baking tin and bake for approximately 20 minutes.
  7. To make the icing, blend the sugar and vanilla essence into the butter with a fork.
  8. Let the cake cool before icing. Optional: top with roughly ground cashew nuts or sunflower seeds.
