Carrot & zucchini soup

    cumin powder

    olive oil

    coconut milk
  • 2 cups

  1. Peel the carrots. Cut the carrots and zucchini into cubes of about 1 inch. Peel and grate the fresh ginger.

  2. Heat the olive oil in a soup pot and add the zucchini together with the spices and the ginger.
  3. Fry the zucchini for about five minutes. Stir from time to time.

  4. Add the carrot, coconut milk, bay leaves, salt, and water. Bring everything to a boil and simmer for about 15 minutes on low heat.

  5. Prick a carrot to check if it is well cooked. Let everything cook until tender.

  6. Remove the laurel leaves from the pan and purée the rest in a blender until you have a smooth soup. Season with salt and pepper.
