Roasted Cauliflower & Chickpeas

This cauliflower and chickpea dish is deliciously nutritious and can be made in no time. Fresh parsley and other herbs and spices give this meal a lovely flavor.

Ingredients

Servings: 2 people
  • ½
    lemon
  • 2 cups
    canned chickpeas
  • 2 tbsp
    olive oil
  • 1 tsp
    cumin powder
  • 1 tsp
    curry powder
  • 1 tsp
    coriander powder
  • 4 cups
    cauliflower
  • 2 tsp
    white wine vinegar
  • 1 tbsp
    mustard
  • 2 tsp
    agave syrup
  • 2 handfuls
    fresh parsley
  • 1 tsp
    paprika powder

Instructions

  1. Preheat the oven to 2400 degrees.

  2. Drain the chickpeas in a sieve and rinse with cold water.
  3. Cut or break the cauliflower into florets and place together with the drained chickpeas in an ovenproof dish.
  4. Mix the olive oil with the powdered herbs in a small bowl and spread this mixture over the cauliflower and chickpeas. Stir well so that everything is covered with the spicy oil.
  5. Put it in the preheated oven for 20 minutes, remove to stir, then put back in the oven for a further 10 minutes.
  6. Meanwhile, make the dressing by mixing the vinegar, mustard, agave syrup, and lemon juice. Chop the parsley finely (including the stalks, which contain most of the flavor) and mix into the dressing.

  7. Remove the cauliflower and chickpeas from the oven. Leave to cool in the ovenproof dish, pour the dressing on top, and season with salt and pepper.
