Chia Chocolate Pudding

Chocolate pudding and a superfood at the same time.

The name ‘chia’ comes from the native language of the Nahuatl tribe of Central America. Chia seeds have a high nutritional value, and contain more omega 3 fats than any other vegetable source. They are rich in protein, amino acids and all sorts of healthy vitamins and minerals. They have a whole range of other health benefits as well and truly deserve to be considered a superfood!

Ingredients

Servings: 2 persons
  • 1/4 cup
    dates
  • 1/3 cup
    strawberry
  • 1
    banana
  • 1/3 cup
    chia seeds
  • 1 1/4 cup
    plant milk
  • 2 tbsp.
    cocoa powder
  • 1 tsp.
    cinnamon
  • 1 handful
    walnuts
  • 1 tbsp.
    sunflower seeds

Instructions

  1. If you plan to eat your chia pudding for breakfast, begin this recipe the night before! Alternatively, if you intend to eat the pudding for dessert, begin preparing the recipe in the morning. Mix the chia seeds together with the plant milk, cinnamon and cocoa powder in a bowl.

  2. Stir well, cover and put in the refrigerator for at least 3 hours (or overnight).
  3. After 3 hours, use the hand blender to mix the dates through the seed mixture. If using hard dates, soak them in warm water for 5 minutes first.

  4. Cut the strawberries and the banana into small pieces.
  5. Chop the walnuts finely.

  6. Garnish your chocolate chia mix with the strawberries, banana, walnuts and sunflower seeds.
