Spicy Pumpkin Soup

This is a perfect quick and easy meal to get you through the week.

Ingredients

Servings: 4 persons
  • 2 tbsp
    oil
  • 1
    spicy pepper cut in rings
  • 1 large
    onion shredded
  • 1
    red bell pepper diced
  • 1 small
    bottle squash diced (if you can't find bottle squash you can use zucchini or pumpkin)
  • 1 can(s)
    peeled tomatoes
  • 1
    bay leaf
  • 3 cups
    water
  • 2 cubes
    veggie bouillon
  • 1 tbsp
    paprika powder

Instructions

  1. Heat up the oil in a large pan and stir-fry the spicy pepper, red bell pepper, onion and squash for a couple minutes
  2. Add the tomatoes, bay leaf, and veggie bouillon. Add water and let the boil for about 15 minutes until the veggies are soft.
  3. remove the bay leaf and add the paprika powder.
  4. Blend the final mix either in a blender or in the pan using a handheld blender.
  5. Done! (optional) garnish with fresh parsley.

Tip: Works great as a side for some bread with hummus.
