This is a simple variation on a tomato soup recipe. The added lentils are rich in iron and protein, and make the soup more nutritious. The tomatoes are bursting with vitamins and minerals, and contain vitamin C, zinc, calcium, and iron.

Ingredients

Servings: 2 people
  • 2
    bell peppers
  • 4
    tomatoes
  • 1 ⅔ cups
    lentils from the can
  • 4 ¼ cups
    vegetable stock
  • 4 tbsp
    chili sauce
  • ½ cup
    tomato puree

Instructions

  1. Boil the vegetable stock in a saucepan.

  2. Meanwhile, chop the bell peppers and add to the boiling vegetable stock.

  3. Cook for five minutes, while chopping the tomatoes into cubes. Add the tomatoes and cook for another 10 minutes on low heat.

  4. Add the lentils and wait until the soup comes back to the boil.

  5. Mix in the tomato purée and chilli sauce and heat before serving.
