Vegan carrot salmon

Vegan carrot salmon is a feast for the eyes as well as the palate. Its marine flavor intensifies the longer the carrot strips are marinated. Vegan carrot salmon makes for a great appetizer or you can use it to spice up your sushi!

Ingredients

Servings: 4 portions

Marinade

  • 4
    carrots large
  • 2 tbsp
    vinegar (rice or apple cider)
  • 1 sheet
    nori
  • 1 tbsp
    salt
  • 1 tbsp
    liquid smoke
  • cup
    water cold

Coating

  • 3 tbsp
    olive oil
  • 2 drops
    liquid smoke
  • salt to taste

Instructions

  1. Use a potato peeler to cut the carrots into long strips, then place them in boiling water or steam for 5 minutes.
  2. Put the vinegar, nori, salt, and 1 tsp of liquid smoke in a large, sealable container.
  3. Add the lukewarm carrot strips and leave to stand in the fridge overnight (or ideally, 2–3 days).
  4. Mix the oil with a bit of salt and two more drops of liquid smoke, then coat the carrot salmon with the mixture and serve.
