Southern-style plant-based chicken goujons

Ingredients

  • 2
    plant-based chicken goujons e.g. Vivera Plant BBQ Chicken Goujons
  • 300 grams
    oven fries
  • ¼ red cabbage
  • ¼ white cabbage
  • 50 grams
    julienned carrot
  • 2 tablespoons
    mayonnaise plant-based
  • 5 grams
    parsley
  • 1
    corn cob
  • olive oil
  • salt and pepper

Instructions

  1. Prepare the oven fries according to the packet instructions.
  2. Finely shred the red cabbage and white cabbage. Mix with the julienned carrot with two tablespoons of vegan mayonnaise. Chop the parsley and toss thoroughly.
  3. Cut the corn cobs into smaller pieces and cook them in salted water for 10 minutes.
  4. Fry the plant-based chicken goujons for 5 minutes until crispy.
  5. Serve the goujons with the fries, coleslaw, and corn.

Notes

Tip: brush the corn with some plant-based butter and sprinkle with a pinch of sea salt and paprika powder.
