Vegan overnight oats

Overnight oats are the ideal breakfast for those who have little time in the morning and still want to start the day full of energy. This recipe can be modified to your liking. Give this filling and satisfying overnight-oats recipe a try!

Ingredients

Servings: 1 portion
  • 40 g
    oat flakes perhaps a little more
  • 120 ml
    oat milk or another plant-based milk; perhaps a little more
  • 1 tsp
    chia seeds or ground flax seeds
  • 1 pinch
    vanilla pulp scraped from vanilla pod, or vanilla sugar
  • 1 tbsp
    dates cut into small pieces; alternatively, use raisins
  • fresh fruit as desired

Instructions

  1. Mix the oatmeal with the plant-based milk and stir in the chia seeds.

  2. Now stir in the vanilla pulp and the dates.

  3. Wash the fruit, cut into small pieces, and add as a topping. Alternatively, add the fruit just before serving in order to preserve as many nutrients as possible.

  4. Place everything in a screw-top jar in the refrigerator overnight and enjoy a delicious, healthy breakfast the next day!

Notes

For a more delicate taste, you can add a pinch of Ceylon cinnamon, a teaspoon of nut butter, or cocoa nibs.
