Vegan Pesto

Pesto is a sauce which originally comes from the Italian city of Genoa. Traditionally, it is made from fresh basil leaves and Parmesan cheese. This vegan pesto tastes just as good as the traditional variety and is very easy to make. We suggest using nutritional yeast to replace the cheese, thanks to its cheese-like flavour. The basil, pine nuts, and garlic add a true taste of Italy.

There are thousands of meals you can make with pesto. The easiest is perhaps a simple pasta dish. Even in Ancient Rome, the Romans were already eating pesto with their pasta. Ingredients

Servings: 1
  • 1
    basil plant large
  • 30 g
    pine nuts
  • 2 cloves of
    garlic
  • 3 tbsp
    olive oil
  • ½
    lemon
  • 2 tbsp
    nutritional yeast
  • salt and pepper to season

Instructions

  1. Pick all the leaves from a basil plant.
  2. Put the leaves with all the other ingredients into a blender (or in a bowl, when using an immersion blender).
  3. Blend until you have a smooth paste.
  4. Taste the pesto and add some more garlic, olive oil, lemon juice, salt, nutritional yeast, or pepper, as required.
