Classic Cottage Pie recipe with Plant-Based Mince
1 packet Herbivore Mince
½ red onion
2 cloves garlic
1 can chopped tomatoes
1 tsp ground coriander
1 tbsp chutney
1-2 tsp salt (depending on taste preference)
4 medium potatoes or 2 large sweet potatoes
½ cup dairy free milk
3 tbsp olive oil
1 tsp garlic powder
1 tbsp nutritional yeast (optional)
Salt and pepper to taste
Pre-heat oven to 180ºC.
Peel and boil the potatoes in a large pot for approx 20min until very soft, or alternatively steam or roast them for the same time. Set aside and allow to cool.
In a large pan, shallow fry the chopped onion and garlic in 1 tbsp coconut oil until soft.
Then add the mince and brown for 5min before adding the salt, coriander, chutney and tomatoes.
Simmer the mince for 10min.
While the mince is cooking, mash the potatoes, milk, olive oil with garlic powder and nutritional yeast until very smooth. Season according to taste.
In a shallow dish add the pre-cooked mince, and then top with mash. Smooth out the top with a fork.
Allow to cook for a further 20-30min until bubbling and slightly browned on top.
Enjoy immediately with fresh herbs or a light green salad.
