A Jackfruit Challenge

Vegan SPICY JACKFRUIT SAMOSAS Recipe

INGREDIENTS:
1 courgette, finely chopped
1/2 red chilli, deseeded & finely chopped
1 garlic clove, crushed
2 spring onions, finely chopped
2 T chopped coriander
1 T finely grated ginger / 1/2 T ground ginger
1 t black mustard seeds
1 t sesame oil
2~3 T soya sauce
2~3 T Date or Maple a syrup
1 T sriracha sauce
salt to taste
Vegan Phyllo Pastry
Olive oil to brush pastry
Hoisin Sauce to dip
METHOD
Heat sesame oil in a fry pan over medium heat. Add the mustard seeds & cook for 2 mins or until they start to pop.
Add the jackfruit & cook for 3 minutes, breaking up with a fork so you do t have large pieces.
Add the chilli, garlic, ginger, courgette, soya sauce, syrup & sriracha, cooking & stirring for 5 minutes.
Add the spring onions & cook for another 2 minutes.
Remove from the heat & check seasoning, adding more sriracha for spice, syrup for sweetness & some salt if needed. Let it cool.
Take your phyllo pastry out of the fridge & lay it on the counter covering it with a damp cloth.
Remove a piece of pastry a d brush with olive oil. Place a 2nd piece of pastry on top of the first & brush it with olive oil too, add a 3rd piece, also brushing with olive oil.
Cut the rectangle shape of the layered pastry into 4, creating 4 long strips. Place 1-2 T of filling in the top left corner of your pastry, folding the pastry over the filling making a triangle shape, then take it across to the other side, repeating this all the way to the bottom, brush olive oil on the last bit of pastry to help it stick. Lightly brush the whole samosa with olive oil before placing it on a baking tray covered in baking paper. Repeat with rest of filling.
Heat your oven to 180 degrees & bake the samosas for 15~25 mins or until pastry is nicely browned & crisp.
Remove from the oven & let it cook for 5 minutes before seeing with hoisin sauce or any dipping sauce you prefer.
