Quinoa and Roasted Beets

This is a delicious and simple oven dish the incorporates the delectable taste of raw beets and the filling texture of quinoa. One recommended option is to add vegan goat cheese or vegan feta cheese.

Ingredients

Servings: 4 persons
  • cups
    raw red or yellow beets sliced (this is equal to approximately 7 medium sized beets)
  • 2
    onions sliced into 8 pieces
  • 3 tbsp
    fresh oregano roughly chopped
  • 2 tbsp
    oil
  • 3 tbsp
    balsamic vinegar
  • cups
    quinoa
  • ¾ cup
    vegan goat cheese or vegan feta cheese (optional)

Instructions

  1. Preheat the oven to 430°F. Place the beet and onion slices upright in a roasting tin and sprinkle half of the oregano, salt and black pepper over them. Drizzle the oil and balsamic vinegar on top of everything.

  2. Roast the beets and onion slices in a hot oven for 25-30 minutes. Turn over occasionally.
  3. While the tin is roasting, prepare the quinoa according to the instructions on the packaging. After about 15 minutes, place the vegan cheese (if you have any) between the beets and let them roast alongside the tin until golden brown.

  4. Done! Serve the quinoa in wide bowls and pour the oven-roasted mix on top. Garnish with the rest of the fresh oregano.

Notes

Tip: Instead of raw beets you can use cooked red beets. These are much juicier so it will make the final dish have less of that roasted look.
