Nut and Date Balls

These nut and date balls are perfect to take to school, to work, or to snack on after gym. The walnuts and magnesium-rich cashews make them a healthy alternative to a sugar-based snack.

This recipe is very simple and can be made in next to no time. Let your blender do all the work! You can also freeze the nut and date balls to save for later so you’ve always got some snacks on hand.

You can make them even more yummy by rolling the finished balls in coconut flakes or sesame seeds – or both! Coconuts and sesame are rich in healthy fats and fibre.

Ingredients

Servings: 2 people
  • 1 3/4 cups
    dates
  • 3 1/2 cups
    walnuts
  • 1 3/4 cups
    cashew nuts
  • ½ tsp
    salt
  • 3 tbsp
    cocoa powder
  • 1/3 cup
    coconut flakes
  • 1/4 cup
    sesame seeds

Instructions

  1. Grind the nuts finely with a blender or food processsor. Put the resulting nut flour in a bowl, then add the cocoa powder and a pinch of salt. Stir well until the mixture reaches a uniform colour.

  2. Pit the dates and cut them into pieces. Soak them in hot water for about five minutes. This makes them easier to blend. Soft dates can also be smashed with a fork after soaking.
  3. Add the dates to the nut and cocoa powder mixture. Then knead everything with your hand until you’ve created a sort of dough.
  4. Shape the dough into balls about 1 inch wide. Sprinkle some coconut flakes on a cutting board and roll half of the balls in the flakes.

  5. Roll the other half of the balls in the sesame seeds.
  6. Store them in the freezer for at least one hour, then serve them directly.
